Spring Lake Farm is the vision of Ingimundur Kjarval, who studied at Hvanneyri, an agricultural college in Iceland. He worked in agriculture, both in Denmark and England before moving to the States. He has been farming independently since 1982 and operated Spring Lake Farm as a pasture raised meat production since 1996.
A long believer in producing affordable quality food, Mr. Kjarval combines historical methods with latest advances in haymaking. He cross-bred his livestock to produce animals naturally suited for the western Catskills. Mr. Kjarval has been producing quality, ethically treated and affordable meats in natural settings for almost three decades.
