After experimenting with Angus, Simmental, and Charolais cattle on our pastures, our Herd is now primarily a mix of local Herefords and Scottish Highland cattle. The mix of the two makes for a hardy, rugged breed with strong mothering instincts that can withstand our Catskill winters because of the Highland’s thick coats and weather knowledge. Ingimundur likes calm, small framed cattle that finish nicely on pasture. He likes the curtain from the highlands in front of their eyes and believes it protects their eyelids from biting flies attacks.

Herefords originated in southern England but have also been in the States for a long time. They can be recognized by their white faces and red bodies. They are known to be calm, great foragers, and also to withstand difficult climates. The local Herefords were probably bred with local dairy cows at some point.

Highlands originate from the Scotland Highlands. They have long haired coats, usually red to brindle, yellow, white, dun and black (Blondie, the cow in our logo, is an example of one such beautiful yellow highland) . The breed is well known for its ability to forage and to gain weight on even low quality pasture. Highlands are also prolific and protective mothers which has served us well with Catskill predators.

how they are raised: Our cattle spend their whole life outside on pasture. They eat grass, and if the season does not permit, they eat our own hay.
